The Hygiene Manager at Sheraton Kota Kinabalu is responsible for verifying compliance with hygiene and food safety standards throughout the operations. This role involves advising on proper food handling practices, providing food hygiene training to new hires and trainees, identifying risk areas in food operations, and taking preemptive action to ensure safety. The manager also provides technical advice on product labeling to meet government requirements and conducts inspections related to kitchen hygiene and vendor practices to maintain and improve hygiene standards across all food and beverage areas.
High school diploma or GED with 2 years of experience in food and beverage, culinary, or a related area, or a 2-year degree in Hotel and Restaurant Management, Hospitality, Business Administration, or a related major.
Preferred qualifications include an Environmental Health Degree or Culinary Degree.
Experience in managing hygiene and food safety operations.
Ability to verify compliance with standards and regulations related to food hygiene and safety.
Skill in advising and training food handlers on proper food handling practices.
Capability to conduct inspections and implement corrective action plans.
Knowledge of product labeling requirements to fulfill government regulations.
Ability to handle complaints or inquiries from customers and health departments regarding food hygiene.
Strong coordination skills in cleaning programs and pest control efforts.
Competency in maintaining hygiene documentation and improving hygiene standards.
